Ingredients
- 1 cup chicken cut into small pieces and season with salt and pepper
- 4 lices Bacon cut into small pieces
- 2 bell pepper cut into small pieces
- 2 tablespoons ranch dressing (or any creamy dressing)
- 4 flour tortillas
- 2 cup shredded cheddar cheese
- 2 cup shredded Mozzarella cheese
Instructions
- Heat a frying pan over medium heat and add the chicken, bacon, and bell pepper. Stir-fry for 5 to 8 minutes, or until the chicken is cooked through and no longer pink. Transfer to a bowl, add ranch dressing, and stir well to coat the ingredients evenly.
- Place a tortilla in a nonstick frying pan and sprinkle 1/2 cup of shredded cheddar and mozzarella cheese on it. Layer with the chicken and bacon mixture and another 1/2 cup of shredded cheese. Finally, cover with another tortilla.
- Cook over medium heat for 3 to 4 minutes with the lid covered, then flip and cook the other side for an additional 3 to 4 minutes, until the bottom of the quesadilla is golden brown and the cheese is melted in the center. (Repeat the same process for the second quesadilla.)
- Dish out and serve with additional ranch dressing on top, if desired.

- To save time, you may also use pre-cooked chicken, such as leftover rotisserie chicken or grilled chicken. It helps reduce the cooking time and ensures the chicken is fully cooked.
