Chicken and Vegetable Quinoa Bowl with a Kick

Chicken and Vegetable Quinoa Bowl with a Kick is a delicious protein and flavor packed dinner or lunch!

Ingredients
- 2 cups chicken broth
- 1 cup uncooked quinoa
- 1 tbsp olive oil
- 1 onion sliced
- 3 garlic cloves chopped
- 2 zucchini sliced
- 1 yellow squash sliced
- 8 cups fresh baby spinach
- 10 oz can diced tomatoes with chilies
- 2 cups of {Busy Weeknight} Chicken cooked and thinly sliced
Instructions
- bring chicken broth to a boil
- add the quinoa to the broth and bring back up to a boil cover and allow to cook for 12 minutes
- remove from heat and fluff with a fork then recover and allow to sit for 15 minutes
- heat olive oil in a large skillet over medium heat
- add sliced onions and cook for 203 minutes
- add in the garlic, zucchini, yellow squash and tomato with chilies and stir
- season with salt and pepper to taste
- add in the baby spinach and cover
- cook until the spinach wilts
- place quinoa in a bowl or plate and top veggies then the chicken slices
- enjoy!
