Chicken Bacon One Pot Meal Recipe

This delicious Chicken Bacon One Pot meal is perfect for an easy quick weeknight dinner idea. The chicken is cooked with potatoes and peas. Yum!

Ingredients

  • 2 large chicken breasts split into 2
  • 1 medium potato cubed
  • 1 Cup frozen peas
  • 4 lices turkey bacon sliced
  • 1 Cup chicken stock
  • 1/2 ts olive oil
  • salt + pepper to taste

Instructions

  1. In a rimmed skillet, cook the bacon until it browns. Remove bacon and place on a plate.
  2. Keep 1 tbs. of the bacon fat in the skillet
  3. Brown chicken breasts in bacon fat on both sides. Remove from heat
  4. Add potatoes to the skillet and let them brown.
  5. Add the chicken back in the skillet and the chicken stock.
  6. Let the mixture simmer until the sauce thickens up. About 10 minutes
  7. Add the peas and let them cook in the sauce for 1-2 minutes
  8. Remove from heat and place on a platter. Sprinkle the crispy bacon on top
  9. Enjoy!
