Chicken Contadina

Chicken Contadina is a healthy and affordable weeknight dinner for the whole family. Chicken legs are seared until crispy and then braised low and slow in an aromatic vegetables until tender.

  • 6 chicken drumsticks* see the notes
  • 1 carrot sliced or cut into thin strips
  • 1 red bell pepper cut into thin strips
  • 1 talk celery diced
  • 1 onion quartered and thinly sliced
  • 2 cloves garlic thinly sliced
  • 8 cherry tomatoes* see the notes
  • 5 tablespoon olive oil
  • 1 prig rosemary
  • ¼ c dry white wine
  • ¾ c chicken broth
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoon Parsley (optional) chopped

Instructions

  1. Preheat the oven to 350 F.
  2. Heat 3 tablespoon of olive oil in a medium 10-12 inch cast iron skillet and over medium heat.
  3. Season chicken with ¾ teaspoon of salt and ¼ teaspoon pepper and add it to a skillet.
  4. Sear chicken on all sides until nice and brown, about 15-20 minutes. Transfer chicken to a clean plate.
  5. In the same skillet, heat the remaining 2 tablespoon of oil, add onion, carrot, bell pepper, celery, garlic and rosemary and sauté stirring occasionally for 7 minutes.
  6. Add wine and stir for another 5 minutes scrapping the brown bits from the bottom of the pan.
  7. Add chicken broth, the remaining ¼ teaspoon of salt, tomatoes, return chicken to a skillet and braise in the oven for 30-35 minutes or until the instant meat thermometer reads 175 F.
  8. Carefully remove skillet from the oven, adjust the seasoning if necessary, sprinkle with parsley and serve immediately.

Notes

  • Chicken
  • You can also use chicken thighs or chicken breast. If you use the latter, I recommend cutting it into bite size pieces, brown on each side and then braise with vegetables for 20-25 minutes or until the internal temperature reaches 165 F.
  • Tomatoes
  • Instead of Cherry Tomatoes, you can also use Grape Tomatoes or regular size tomatoes. If you choose regular tomatoes, use 2 and chop them into smaller pieces.
