Chicken Dopiaza
Description
This Chicken Dopiaza begins by marinating chicken pieces in yogurt, turmeric, salt, chili powder, coriander powder, cumin powder, and Kashmiri chili. The marination tenderizes the chicken and infuses it with spice. Initially, finely diced onions are caramelized until golden to add sweetness and depth.
Ginger and garlic pastes are sautéed into the onions, followed by diced tomatoes cooked until soft. The marinated chicken is added and cooked briefly before water is incorporated to simmer the curry. Additional onion petals, tomato chunks, and green chilies are added mid-way to provide texture and layered flavor.
Finally, fresh coriander and dried fenugreek leaves finish the dish, imparting freshness and subtle bitterness characteristic of Dopiaza. The curry is cooked until the chicken is tender and sauce is well-developed and served promptly with flatbread.
This preparation highlights the balance between caramelized and fresh onions, spicy heat from the chilis, and aromatic spices melded with creamy yogurt-based marinade.
Ingredients
Marination:
- 600 g chicken
- 100 g yogurt
- 1 tsp turmeric powder Haldi
- 1 tsp salt
- 1 tsp chilli powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp kashmiri chili
Curry:
- 50 ml neutral cooking oil generic cooking oil
- 2 +1 onion 1 cut into petals
- 2 +2 tomato 2 cut into large chunks
- 1 tsp garlic paste
- 1 tsp ginger paste
- 2 green chili
- 200 ml water
- Coriander
- 1 tsp fenugreek leaves Methi, dried
Instructions
- In a large bowl add the marination ingredients to the chicken then mix until well combined before setting aside to marinate for at least 30 minutes
- As the chicken is marinating heat up the oil in a pot before adding two finely diced onions and cook for 3-4 minutes on medium heat until golden brown and caramelised
- Add the ginger paste and garlic then cook for 1-2 minutes
- Add two finely diced tomatoes and cook for 3-4 minutes
- Add the marinated chicken then cook for 4-5 minutes
- Add the water then give it a quick stir before covering and cook for 15 minutes
- As the chicken is cooking cut the remaining onion into squares and the tomatoes into chunks then add into the pan along with the green chilli before cooking for 3-4 minutes
- Add the finely chopped coriander and dried fenugreek leaves then cook for 1-2 minutes
- Serve immediately with chapatti and enjoy!

- Marinate chicken for at least 30 minutes to enhance flavor and tenderness.
