Chicken Marsala

Chicken marsala is an Italian dish made with chicken breasts, mushrooms and marsala wine, produced in Sicily.

Ingredients
- 2 lb chicken cutlets
- ½ cup extra-virgin olive oil
- 2 shallots , finely chopped
- 1 bay leaf
- 1 small sprig rosemary
- 3 cloves garlic , pressed
- 8 oz. button mushrooms , cremini or portobello
- 1 cup marsala wine
- 1 cup flour
- 1 tablespoon finely chopped parsley
- salt
- black pepper freshly ground
Instructions
- Heat the olive oil in a pan over medium heat and brown the shallots and garlic, stirring constantly for 1 minute.
- After a minute, add the bay leaf and a small sprig of rosemary. Sauté again for a minute, stirring constantly.
- Dredge the chicken cutlets in flour, then place them in the pan and brown them on both sides for about 4 to 5 minutes.
- As soon as the chicken is turned over for the first time and it is browned on the first side, add the sliced mushrooms and continue cooking, turning frequently so that the chicken and mushrooms can brown well.
- The operation should last between 5 and 10 minutes.
- Finally, add the marsala and reduce the heat to low.
- Season with salt and pepper then add the chopped parsley.
- Cook for another 5 to 6 minutes, stirring frequently. The sauce is ready when the wine has taken on a syrupy consistency.
- Serve immediately with tagliatelle, rice or potatoes.
