Creamy chicken salad with crunchy almonds, sweet apricots, and tangy fresh tarragon. It's low carb and gluten free.

Ingredients
- 3 cups cooked chicken shredded or chopped
- 3/4 cup mayonnaise
- 2/3 cups dried apricots chopped
- 1/2 cup almonds coarsely chopped
- 1 to 2 Tablespoons fresh tarragon chopped
- 1 teaspoon Coleman's dried mustard
- 1/2 teaspoon kosher salt to taste
- 1/2 teaspoon black pepper to taste
Instructions
- Mix all ingredients everything together and chill. Season with salt and pepper to taste.
