Ingredients

  • 1 tbsp coconut oil
  • 1 onion coarsely chopped, medium
  • 3 carrot cut into chunks
  • 1 kg chicken drumstick
  • 4 potato cut into chunks, small
  • 2 bay leaf
  • lime juice juice of one lime
  • crushed red pepper optional, to taste
  • 1 liter chicken broth
  • 1 tbsp salt
  • 1 tbsp flat leaf parsley chopped

Instructions

  1. In a large pot heat the coconut oil on medium high heat.
  2. Add the onions and carrots and cook for about 5 minutes.
  3. Add the Chicken drumsticks, potatoes, bay leaves, lime juice and hot pepper is using and give it a good stir.
  4. Pour the chicken broth into the pot, bring to a boil, then reduce the heat.
  5. Cover with a lid and simmer for 60 minutes until the chicken is tender.
  6. Season with some salt, more lime juice if desired and stir in the chopped parsley.
