Chicken Tinga Tacos Recipe

These Chicken Tinga Tacos are spicy, but not face-meltingly spicy, and the smoky flavor of the sauce is just so good!

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion chopped
  • 2 cloves garlic roughly chopped
  • 1 teaspoon Mexican oregano
  • ½ teaspoon cumin ground
  • 15 ounces tomato 1 can, fire-roasted, diced
  • 1 cup chicken broth low-sodium
  • 2 bay leaf
  • ½ teaspoon kosher salt
  • black pepper to taste, ground
  • 2 pounds chicken breast boneless, skinless
  • 2 tablespoons chipotle peppers in adobo sauce
  • 8 (4-6-inch) corn tortillas

Optional Toppings

  • cotija cheese
  • refried beans
  • red onion diced
  • cilantro chopped, fresh

Instructions

  1. In a large pot or Dutch oven, heat the oil over medium heat. Add in the onion and cook until softened, 5-7 minutes.
  2. Add in the garlic, oregano, and cumin, cooking until fragrant. About 1-2 minutes.
  3. Stir in the fire roasted tomatoes, chicken broth, bay leaves, salt, and pepper. Add in the chicken and bring the mixture to a simmer.
  4. Cover and simmer until the chicken is cooked through, 20-30 minutes. Set the chicken aside. Discard the bay leaves.
  5. Add the chipotle peppers to the pot and using an immersion blender, blend until smooth.
  6. Simmer the sauce until it has thickened, about 10-15 minutes.
  7. Shred the chicken and return it to the pot. Stir until combined and warmed through.
  8. Heat a cast iron skillet over medium-high heat. Once hot, cook the tortillas for 1-2 minutes per side until warmed through.
  9. Serve tacos immediately with desired toppings.

Notes

  • Storage: Store chicken tinga taco meat in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.
  • You can also transfer the sauce to a blender, blend, and then return it to the pot.
