Ingredients
- 4-6 cups fresh berries I like to use a combination of raspberries, strawberries, blueberries and blackberries
- 6-7 ounces good quality white chocolate chopped (I use Ghiradelli or Lindt)
- 1 cup heavy cream
- 1 teaspoon vanilla
Instructions
- 1. At least 60-90 minutes before serving time, spread the berries on a baking sheet and place in the freezer.
- 2. While berries are freezing, place cream in a medium size microwave-safe bowl. Microwave on high for 1-2 minutes or until cream just begins to bubble around the edges. Remove from microwave and immediately add white chocolate. Cover with a piece of plastic wrap and alllow to sit for several minutes then stir well until all chocolate is melted and sauce is smooth. Set aside, covered until serving time.
- 3. When ready to serve, divide berries among 4 dessert plates or 4 pretty bowls. Re-heat white chocolate sauce for 40-50 seconds. Drizzle sauce generously over berries. Serve with a mint sprig for garnish.
