Chinese Donuts

Chinese Donuts are the delicious Chinese buffet treats with a yeast dough made from scratch and deep fried golden brown, then rolled in sugar.

Ingredients

Servings
  • 1 packet active dry yeast , (0.25 ounces)
  • 1/4 cup warm water
  • 1/3 cup sugar , divided
  • 1 cup evaporated milk
  • 1/2 cup vegetable oil
  • 1 large egg
  • 3 tablespoons baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 5 cups flour
  • vegetable oil , for frying

To Finish:

  • 1 cup sugar
  • 1/2 teaspoon ground nutmeg

Instructions

  1. In a large mixing bowl add yeast, warm water, and sugar, stirring well.
  2. Let sit for 5 minutes, until foamy.
  3. Add evaporated milk, oil, remaining sugar, and egg.
  4. Add in baking powder, nutmeg, salt and flour, whisking in the flour in 1/2 cup increments until all the flour has been mixed in.
  5. Cover with plastic wrap and refrigerate at least 4 hours.
  6. Punch down dough and remove onto a floured surface.
  7. Roll dough into a 12x12-inch square, roughly 1/4" thick.
  8. Cut out 3-inch circles with a biscuit cutter.
  9. Heat 2 inches of vegetable oil to 375 degrees.
  10. Without crowding the pot, fry donuts in batches.
  11. Fry for 2-3 minutes until golden brown on both sides.
  12. Remove with slotted spatula onto a baking sheet.
  13. Note: Fry the remaining edges and enjoy as a treat for the cook!

To Finish:

  1. Add sugar and nutmeg to a bowl and mix.
  2. Add donuts to the bowl one at a time and roll in sugar until well coated.
