Chipotle Cumin Chicken Thighs

Ingredients
- 1½ tsp cumin
- 1 tsp sea salt
- 1 tsp garlic powder
- ¾ tsp chipotle chile powder
- ½ tsp Coriander
- ½ tsp onion powder
- ½ tsp dried oregano
- 1½ tbsp sunflower oil
- 1½ lbs boneless skinless chicken thighs

Instructions
- Make the seasoning mixture by combining the cumin, sea salt, garlic powder, chipotle chile powder, coriander, onion powder, and oregano in a bowl. Drizzle in the olive oil and mix until well combined.
- Slather both sides of the chicken thighs with the mixture.
- Heat a grill pan or large cast iron skillet coated in cooking spray over medium-high heat.
- Add the chicken thighs to the HOT pan and cook for 4-5 minutes or until golden brown.
- Flip the thighs over and continue cooking for another 3-4 minutes, or until the chicken is cooked through.
- Remove from the grill pan and let the meat rest for a few minutes before slicing and serving. Enjoy.
