Chipotle Sweet Potatoes with Bacon

Mashed Sweet Potatoes with a Chipotle kick! And who can say no to bacon. This is a great side dish for a random weeknight, or even a side for Thanksgiving!

Ingredients
- 4 large sweet potatoes peeled and cubed
- 4 tablespoons butter
- 1 & 1/2 to 3 teaspoons chipotle pepper chopped
- 1/2 to 1 teaspoon adobo sauce from can of peppers
- 1 teaspoon salt
- 3 trips Bacon cooked and crumbled
- 1 green onion chopped
Instructions
- Fill a saucepan with 3 inches of water, cover, and set it over high heat to get it boiling.
- Peel the sweet potatoes and cut them into 1 inch cubes. Place the potatoes in a steamer basket.
- Once the water is boiling, reduce to a simmer, and place the steamer basket over the water, with the lid on. (The water should be at least 2 inches below the basket.)
- Allow to steam for 20 minutes or until the potatoes are fork tender.
- Transfer the potatoes to a bowl. Add butter, and mash with potato masher. Add chipotle peppers, adobo sauce, and salt. Continue mashing to combine. Transfer to serving bowl and sprinkle with cooked bacon and green onions.
Notes
- If you don't have a steamer, boiling the potatoes will work just fine (you retain more nutrients by steaming).You are going to have to use your mouth to decide how much chipotle to put in. Start small, chipotle peppers are no joke. Definitely add some of the adobo sauce, but don't go too crazy. You can always add more. (Find cans of chipotle chiles in adobo sauce in the Latin aisle of the grocery store. Freeze the remainder of the can in a ziplock bag, it lasts a long time.)
