Ingredients
Cookie Ingredients
- ⅓ C unsalted butter melted
- 2 large eggs
- 1 - 15 oz chocolate cake mix
- 1 C semi-sweet chocolate chips
Chocolate Ganache
- 1 C semi-sweet chocolate chips
- 1 C mini chocolate chips
- ½ C heavy whipping cream
Instructions
- Preheat oven to 350 degrees and line two cookie sheets with parchment paper
- Using a large bowl, combine the melted butter, eggs, chocolate cake mix, and 1 C chocolate chips
- Using a small cookie scoop, scoop some dough and place it onto the cookie sheet
- Bake in the oven for 9-11 minutes or until the tops look firm
- Remove from oven and allow to cool
Chocolate Ganache Directions
- Using a small pot, bring the heavy whipping cream to a simmer
- Pour 1 C of chocolate chips into a heat-safe bowl.
- Pour the hot cream over the chocolate chips and let it sit for 1 minute before whisking until smooth
- Pour the ganache into a squeeze bottle
- Place the cookies onto a wire rack over a cookie sheet
- Squeeze a nice size amount of the ganache onto the top of the cookies and allow it to pour over the cookies
- Sprinkle a few mini chocolate chips on top of the cookies
- Allow the ganache to set before enjoying the cookies!
