Description
This recipe blends mashed ripe bananas with brown and white sugars, vegetable oil, an egg, sour cream, and vanilla extract to create a moist and flavorful muffin batter. Dry ingredients including flour, baking soda, baking powder, and salt are combined separately and then gently mixed into the wet ingredients to avoid overworking the batter. Chocolate chips are folded in last for melty chocolate bursts throughout the muffins.
The muffins are baked in a lined or greased tin at 375°F until golden brown, about 10 minutes for mini muffins or 20 minutes for regular size. The result is a tender yet slightly dense muffin rich in banana flavor with chocolate chips adding sweet pockets of texture.

Ingredients
- 1 cup banana mashed ripe
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/2 cup vegetable oil
- 1 egg
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda

Instructions
- Mix the bananas, sugars, oil, egg, sour cream and vanilla extract together.
- Whisk together your dry ingredients.
- Combine the wet and dry ingredients until they are almost mixed together thoroughly, then add in the chocolate chips. Don't over mix the batter too much!
- Place into your lined or greased unlined muffin tins and bake at 375 degrees until beautifully browned, about 10 minutes for mini's and 20 for large.
Notes
- Omitting the chocolate chips yields a tasty plain banana muffin variation.
