Ingredients

  • 1 1/2 cup butter unsalted
  • 1 1/2 cup light brown sugar
  • 1/2 cup sugar
  • 2 large eggs
  • 3 teaspoon pure vanilla extract
  • 4 cup flour
  • 4 teaspoon cornstarch
  • 2 teaspoon baking soda
  • 3 cup semi-sweet chocolate chips
  • 2 cup confetti sprinkles

Vanilla Frosting

  • 2 cup butter unsalted
  • 5 cup powdered sugar
  • 1 tablespoon pure vanilla extract
  • 5 tablespoon heavy whipping cream
  • 1 cup confetti sprinkles

Instructions

  1. Preheat oven to 350 degrees and spray the three cake pans with pam baking spray.
  2. Using a standing mixer, cream the butter, brown sugar, sugar, eggs, and vanilla until fluffy and combined.
  3. Using a large bowl, whisk the flour, cornstarch, and baking soda.
  4. Gradually beat in the dry ingredients until combined.
  5. Fold in the chocolate chips and the sprinkles.
  6. Divide the cookie batter between the three pans and bake in the oven for 20-30 minutes or until a light golden brown.
  7. Allow to cool for 30 minutes before removing from pans and placing onto a wire rack.

Vanilla Frosting

  1. Using a standing mixer, beat the butter, powdered sugar, vanilla, and heavy whipping cream until creamy, fluffy, and holds a peak.
  2. Scoop the frosting into the piping bag.
  3. Place one cookie cake layer onto the cake board.
  4. Using the piping bag, pipe dollops of frosting all over the top of the cookie cake.
  5. Place a second cookie cake layer on top of the frosting and gently press down.
  6. Pipe another layer of frosting on top of the second cookie cake layer.
  7. Place the last layer on top of the second layer of frosting.
  8. Pipe dollops of frosting around the edge of the cookie cake and sprinkle some confetti sprinkles on top.
  9. Enjoy!
