Ingredients
- 1/2 cup vegetable oil
- 1 large egg
- 1 cup milk
- 2 teaspoons vanilla extract
- 2 cups flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup mini semi-sweet chocolate chips
Instructions
- Preheat oven to 400 degrees.
- Whisk together the vegetable oil, egg, milk and vanilla extract until well combined.
- Sift together flour, sugar, baking powder and salt.
- Whisk together the dry and wet ingredients until just combined, then stir in the chocolate chips.
- Line muffin tins with muffin liners and fill the cups 3/4 full.
- Bake for 20 to 22 minutes or until toothpick placed into muffins come out clean.
