Chocolate Covered Apples

Juicy, crisp apples are sliced up and dunked in rich, velvety chocolate before being garnished with all of your favorite toppings!

  • 2 large apples
  • 3/4 cup semi-sweet chocolate chips
  • 3/4 cup caramels
  • 1 tablespoon heavy cream
  • 1/2 cup pecans chopped
  • 2 tablespoons lemon juice

Instructions

  1. Start by washing the apples and patting them dry. Cut the apples in half, then each half into 4 wedges. Go ahead and trim the core off of each wedge and remove seeds if there are some.
  2. Stick a wooden skewer into the bottom of each wedge. You could also use a popsicle stick. Place the skewered apple wedges in a bowl and toss them with lemon juice to prevent browning. Set them aside.
  3. In a microwave safe bowl, melt the semi-sweet chocolate chips in 30 second intervals, stirring after each interval, until the chocolate is completely melted.
  4. Line a baking tray or board with parchment paper. Take your skewered apple wedge and dunk them a little more than halfway into the chocolate. Let the excess drip off, then place the chocolate covered apple onto the parchment. Repeat this with all of the apples, then refrigerate them for 15 minutes or until hardened.
  5. While those cool, in a separate microwave safe bowl, combine the caramel bits and heavy cream. Microwave this mixture in 30 second intervals, stirring after each one until melted. Once the chocolate has set on the apples, remove them from the fridge. Chop up your pecans and set them aside. Drizzle the melted caramel sauce on top of the apples, then sprinkle on the chopped pecans.
  6. Place these back in the fridge for about 20 more minutes, or until set. Remove from the fridge, serve and enjoy!

Notes

  • Storage - If you have leftover apple slices, you can store them in the fridge for up to 3 days in an airtight container. Because you doused them with lemon juice, they shouldn't brown. If they do, it will be minimal.
