Peanut Butter Dipped Chocolate Covered Apples with Caramel

Ingredients

  • 1 Cosmic Crisp® apple
  • 1/2-3/4 cup natural peanut butter (natural peanut butter works best as it's a easier consistency for dipping)
  • 2 cups regular or dairy-free semi-sweet chocolate chips
  • 10 regular or vegan caramels
  • 2-3 tsp milk of choice
  • sea salt

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Dip the apple in hot water for 5-10 seconds, then scrub with a paper towel or dish cloth to get as much of the waxy residue off (this helps the peanut butter layer stay on the apple better).
  3. Cut the apple into 8-10 wedges/slices and pat each with a paper towel to get some of the moisture off the apple slice. Put the peanut butter in a small bowl and dip each apple into the peanut butter, allowing excess to drip off before placing on the parchment lined baking sheet.
  4. Place the baking sheet with the peanut butter dipped apples in the fridge for at least 30 minutes.
  5. After at least 30 minutes, melt the chocolate chips over low heat on the oven, stirring occasionally OR melt by microwaving in 20 second increments, stirring after each, until fully melted.
  6. Remove the apples from the fridge and dip each slice in the melted chocolate, letting excess drip off (don't worry if some of the peanut butter mixed with the chocolate as you dip the apple slices, it will still be in the chocolate and bring lots of flavour!) Put the chocolate dipped apples back on the parchment lined backing sheet and once all are dipped, place in the fridge to set for at least 30 minutes.
  7. After at least 30 minutes, melt the caramels with 2 tsp of milk over low heat on the oven, stirring occasionally OR melt by microwaving in 20 second increments, stirring after each, until fully melted. Add another 1-2 tsp of milk if needed to make the caramel more drizzly.
  8. Once caramel is melted, immediately remove the chocolate covered apples from the fridge and drizzle each with the caramel and sprinkle sea salt on each slice.
  9. Allow apples to chill in the fridge for 10-15 more minutes to fully set. Then, store in the fridge for up to one day. They are best enjoyed however on the day they're made!
