Ingredients
- 2 cups quick oats NOT old fashioned oats
- 1 cup peanut butter creamy
- 1/4 cup honey
- Christmas Mini M&Ms
Instructions
- Add the quick oats to a large mixing bowl.
- Add the peanut butter and honey and stir until well combined. If time permits, chill the dough in the fridge for 30 minutes so it will be easier to work with.
- Portion out the dough into Tablespoon-sized balls.
- Press the M&Ms into the balls, and roll again if needed so they are round in shape. Enjoy!

- Nut-free Variation: If allergies are a concern, you can substitute a different type of nut butter for the peanut butter. Cashew butter and almond butter are two of my favorite options. For a nut-free version of this recipe, use sunflower seed butter.
- Vegan Variation: To make this a vegan recipe, you can substitute your favorite sweetener for the honey. Maple syrup or molasses are two good options with similar sweetness.
- Gluten-Free Variation: While oats themselves are gluten free, you may want to check the packaging to ensure that the oats you use are certified gluten-free. Sometimes gluten free products are made in a facility that also processes ingredients containing gluten or wheat, which can allow trace amounts into other food items.
- Mix-ins: This is an easy recipe to customize with your favorite goodies. Raisins, dried cranberries white chocolate chips, dark chocolate chips, or shredded coconut also make fantastic additions.
- Storage: The finished energy balls can be kept in an airtight container at room temperature for up to a week. For longer term storage, you can keep them in the refrigerator for up to 2 weeks, or in the freezer for up to 2-3 months. When freezing, be sure to use a freezer bag or freezer-safe container.
