Cinnamon Apple Waffles made with whole grain flour, shredded apples and plenty of cinnamon for a delicious way to enjoy waffles. Dairy free and vegan friendly using a flaxseed egg. Great for freezing and meal prep.

Ingredients
- 2 cups white whole wheat flour
- 3 Tablespoon granulated sugar
- 1 Tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon fine sea salt
- 2 large eggs
- 1.5 cups unsweetened non-dairy milk
- ¼ cup avocado oil or melted/cooled coconut oil
- ¼ teaspoon vanilla extract
- 1 cup shredded apples about 2 small apples

- 1 medium apple peeled and sliced
- 1/2 teaspoon ground cinnamon
- 1/2 tablespoon coconut oil or dairy free butter

Instructions

- Preheat waffle iron and grease if needed.
- Mix wet ingredients: In a large bowl, whisk together eggs and oil. Add in vanilla and milk, gently whisking to combine.
- Add dry ingredients: Add in flour, baking powder, salt, cinnamon, and apples; combine with spatula until no lumps are present. Depending on your flour blend you may need a touch more milk here OR a tiny bit more flour. Batter should be somewhat thick but not drippy.
- Cook: Use 1/4 cup to pour batter into waffle iron; cook on low-medium heat for 3-4 minutes or until waffles are lightly golden. Every waffle iron is different so cook according to manufacturer’s instructions.
- Keep warm in the oven (about 160ºF) until ready to serve.

- In medium skillet over medium heat, sauté sliced apples with cinnamon and oil or ghee; stir occasionally for about 5 minutes or until soft. Add to warm waffles and serve immediately.
Notes
- FLOUR: You can substitute half all purpose with half whole wheat, or 1:1 gluten free flour blend for similar results.

- Reheating Instructions: Toast in toaster set to high heat (twice, if needed) or in a preheated 350ºF toaster oven or oven for 5-10 minutes.
- To freeze: Cool waffles completely, then place in plastic freezer storage bag, seal tight, label, date and freeze for up to 3 months. Reheat as instructed, adding 2-3 minutes to toasting time.
