Cinnamon Date & Walnut Baked Oatmeal

The Cinnamon Date & Walnut Baked Oatmeal is a hearty breakfast baked with rolled oats combined with yogurt, eggs, brown sugar, vanilla, cinnamon, and milk. Sweet chopped dates and crunchy walnut halves add texture and natural sweetness. Baking yields a warm, tender oatmeal custard with a gently spiced flavor profile.

Description

This baked oatmeal begins by whisking together yogurt, eggs, brown sugar, vanilla extract, cinnamon, baking powder, and salt until smooth. Milk is added to the mixture to provide moisture and richness. Chopped walnuts and dates are stirred in alongside rolled oats to form the batter.

The oat mixture is poured into a greased casserole dish and baked at 375°F for about 45 minutes, until the center is set and no longer wet. The cinnamon and vanilla give the dish a warm, comforting aroma, while the dates provide pockets of sweetness balanced by the earthy crunch of walnuts.

This oatmeal serves well as a filling breakfast or snack, offering fiber and sweetness in a baked form that can be prepared ahead or served warm from the oven.
