Citrus Salad with Goat Cheese and Pistachios

This quick and easy Winter citrus salad is topped with goat cheese, pistachios, mint and olive oil. Simple enough for a casual weeknight dinner but elegant enough for entertaining.

Ingredients

  • 2 oranges (any type, ideally seedless)
  • 2 large grapefruits (any type)
  • ¼ cup pistachios (roughly chopped)
  • 4 ounces goat cheese
  • 2 tablespoons fresh mint (minced)
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste

Instructions

  1. Using a sharp paring knife, carefully peel the outside of each citrus fruit. Next, thinly slice each and lay on a large platter or plate.
  2. Crumble goat cheese over the fruit then sprinkle with all remaining ingredients. Season with salt and pepper to taste before serving.
