Ingredients
- 1 1/2 to 2 pounds beef sirloin steak cubed into 1-inch pieces
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 1 tablespoon vegetable oil
- 1 medium white onion chopped
- 4 tablespoons salted butter
- 4 cups beef broth
- 1/3 cup red wine optional
- 1 tablespoon whole grain mustard
- 1 teaspoon garlic powder
- 1 cup heavy cream
- 1 pound egg noodles
Instructions
- Cut 1 1/2 to 2 pounds beef sirloin steak into 1-inch cubes. Season with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Dust with 1/2 cup all-purpose flour and toss together to coat. Set aside.
- Heat 1 tablespoon vegetable oil in a large heavy skillet over medium-high heat. Add in chopped onions and cook until tender, about 5 minutes, stirring frequently. Remove from skillet and set aside in a bowl or plate.
- Without cleaning the skillet, add in 4 tablespoons salted butter and let melt over medium-high heat. Add in steak cubes and cook until browned, 8-10 minutes, stirring frequently. Work in batches if you need to so you don't crowd the pan.
- Return onions to the skillet. Pour in 4 cups beef broth, 1/3 cup red wine (optional), 1 tablespoon whole grain mustard, and 1 teaspoon garlic powder and bring to a simmer. Let simmer for 25 minutes. Add in 1 cup heavy cream and simmer for another 15 minutes.
- While the beef is simmering, Cook 1 pound egg noodles according to package directions. Drain well.
- Season the beef sauce with additional salt and pepper to taste. Serve by spooning the beef over the noodles.
Notes
- Sirloin is our recommended choice for this recipe for texture and price point. Ribeye or tenderloin are more tender options, but pricier. For a budget-friendly option, use ground beef or chuck roast. Chuck roast may need to simmer longer to be tender.
