Classic potato salad is creamy and made with celery, onion, sweet pickles to give it great flavor and crunch!

Ingredients
- 2 pounds potatoes (I used red potatoes),peeled, cooked, and diced
- 1/3 cup chopped red onion
- 1/2 cup chopped celery
- 1/4 cup chopped sweet pickles
- 1 teaspoon white vinegar
- 1 teaspoon granulated sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon celery seed
- 3 tablespoons mayonnaise
- 1/2 cup plain greek yogurt

Instructions
- In a large bowl add the cooked and cooled diced potatoes, red onion, celery, and sweet pickles.
- In a small bowl whisk together the vinegar, sugar, salt, and celery seed.
- Pour the vinegar mixture over the potatoes and toss gently.
- In a small bowl whisk together the mayonnaise and Greek yogurt.
- Pour the dressing over the potatoes and fold together until all the potatoes are coated in the mayo and yogurt mixture.
- Refrigerate for at least an hour before serving.
Notes
- I used red potatoes to make my potato salad, but feel free to use whatever variety you have or prefer.
