Description

This recipe begins by cooking spaghetti until al dente, reserving some pasta water before draining and tossing with olive oil to prevent sticking. Bacon is cooked in a skillet until crispy and then drained. Onions are sautéed in rendered bacon fat until translucent, followed by garlic for a brief cook.

The bacon, onions, and garlic are returned to the pan and combined with the drained pasta. The beaten eggs and half of the shredded Pecorino Romano cheese are tossed quickly with the hot pasta so the residual heat cooks the eggs gently, forming a creamy coating. Additional pasta water or olive oil can be added to adjust the sauce consistency.

The dish is finished with salt, pepper, and extra cheese for serving. This method yields a smooth, richly flavored pasta with smoky bacon and sharp cheese, characteristic of traditional carbonara without the use of cream.

  • 1 pound spaghetti
  • 1 tablespoon olive oil
  • 1 pound Bacon diced
  • 1 cup onion diced
  • 3 cloves garlic minced
  • 5 egg lightly beaten, large
  • 1 cup Pecorino Romano cheese divided, shredded (can sub parmesan
  • salt
  • black pepper

Instructions

  1. Cook the spaghetti until al dente. Reserve a litte of the pasta water, drain and toss with a little olive oil.
  2. Meanwhile in a large skillet, cook bacon until crispy; remove and drain onto paper towels.
  3. Using 2 Tbs of reserved bacon fat, cook the onion until just translucent.
  4. Add the garlic, and cook 1 minute more.
  5. Return bacon to pan and combine.
  6. Combine the bacon/onion/garlic mixture with the drained pasta and toss, adding more olive oil or pasta water if it seems dry.
  7. Add the beaten eggs and toss with tongs until eggs coat all of the pasta.
  8. Add 1/2 cup cheese, and toss again.
  9. Add salt and pepper to taste, and serve with extra cheese.
  10. Devour.
