Cochinita Pibil Recipe

Cochinita Pibil is a slow-cooked Mexican pork dish marinated in a blend of achiote paste, vinegar, beef bouillon, and infused with Coke and beer for tender, flavorful shredded pork. The pork is cooked until it falls apart easily, then combined back with the cooking juices to fully absorb the marinade’s characteristic color and taste. It is traditionally served as filling for tacos or tortas.

Description

The Cochinita Pibil Recipe starts by dissolving achiote paste and beef bouillon cube in white vinegar, creating a vibrant marinade. Cubed, lean pork loin roast is combined with this marinade, plus beer and Coca-Cola, in a slow cooker. Cooking occurs on low heat for several hours until the meat is tender enough to shred easily.

After shredding the pork, it is returned to the slow cooker to simmer further, allowing the achiote marinade and cooking liquids to infuse throughout, giving the meat its signature flavor and bright color. This method renders moist, flavorful pork with a balance of savory, tangy, and slightly sweet notes from the Coke and beer.

Cochinita Pibil is commonly served tucked inside tacos or Mexican-style sandwiches (tortas), often accompanied by toppings like Mexican pickled onions or spicy chile de arbol salsa to add acidity and heat, complementing the rich pork.

This recipe balances marinade ingredients to cook pork to a tender, shreddable state while developing the characteristic taste and appearance of authentic Cochinita Pibil.

Ingredients

  • 3.5 oz achiote annato condiment found in the hispanic section of grocery stores, bar form
  • 1/2 cup white vinegar
  • 1 beef bouillon cube
  • 2 lbs pork loin roast Cubed into beef stew size and fat trimmed off, boneless, lean
  • 12 oz Coca-Cola can
  • 1 oz beer bottle (any brand will do) See the notes if you don't want to use beer, lite
  • salt to taste if needed
  • black pepper to taste if needed

Instructions

  1. In a small bowl, dissolve the achiote & beef bullion in the vinegar. Use a fork to break it down. 
  2. Place the pork, achiote mix, beer and soda in the crockpot. Mix and incorporate all ingredients well.
  3. Cook for 4 hours on high or 8 hours on low.
  4. The pork is ready when it shreds easily. Remove a few pieces of pork at a time and shred with two forks in a bowl. You can do this step in the crockpot as well but I prefer to do it in a bowl so you don’t risk scratching the crockpot.
  5. Return shredded pork to the crockpot and cook for 30 more minutes. This will ensure all of the meet is infused with the achiote perfectly.
  6. Serve on tacos or tortas

Notes

  • Serve with Mexican pickled onions for a crisp, citrusy contrast.
  • Pair with a spicy red salsa such as chile de arbol to enhance flavor.
