Coconut Cookies

Simple but delicious buttery coconut cookies, made with or without chocolate chips. Perfectly chewy and a hit with coconut lovers and cookie fans alike!

Ingredients

  • 1 cup butter
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 2 eggs
  • 1 teaspoon coconut extract
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3 cups sweetened flaked coconut
  • 1/2-1 cup chocolate chips

Instructions

  1. Preheat your oven to 350 °F. Line two baking sheets with parchment paper and set aside.
  2. Cream the butter, sugars, eggs and coconut extract together until it's light and fluffy. 
  3. Whisk the dry ingredients together, then add in to the wet. Mix completely. 
  4. Mix in the coconut until combined completely then stir in the chocolate chips if desired.
  5. Drop by tablespoonful onto the prepared baking sheets, leaving two inches of space between them.
  6. Bake for 9-11 minutes in the 350 degree oven, until they are beautifully browned. These are best slightly underbaked and very chewy.

Notes

  • You can omit the chocolate chips if you want just a pure buttery, coconut golden cookie goodness.
