Coconut Oatmeal Recipe
Description
The recipe cooks rolled oats in a mixture of coconut milk and water, gently simmering until the oats are soft but retain some bite. This method infuses the oats with a light coconut flavor and creamy texture without overwhelming richness. The gentle stovetop cooking allows the oats to absorb the liquid gradually for even consistency.
Slicing fresh orange rounds, along with mango and banana pieces, adds a vibrant contrast in both flavor and texture. The citrusy orange complements the sweetness of the mango and banana while providing a refreshing brightness. Optional coconut toppings can add extra texture and coconut flavor.
This oatmeal works well as a nourishing start to the day or as a wholesome snack. It provides a balance of fiber from the oats, natural sugars from the fruit, and a creamy mouthfeel from the coconut milk base.
Ingredients
- 1 cup rolled oats gluten-free, if needed
- 1 cup coconut milk
- 1 cup water
- 1 orange
- 1 Mango diced
- 1 banana sliced
- coconut optional toppings
- coconut milk
- brown sugar
Instructions
- Add the oats, coconut milk, and water to a small pot over high heat. Bring the pot to a boil, stir, then reduce the heat to low and simmer for 15 minutes, or until the oats are soft.
- While the coconut oatmeal is cooking, slice the top and the bottom off the orange. Place the orange on your cutting board and cut off the rind then slice it into circles.
- Divide the coconut oatmeal between two bowls and then top with the orange slices, mango, banana, and any or all of the optional toppings.
