Copycat Chipotle Chicken Tacos
Description
Copycat Chipotle Chicken Tacos combine boneless chicken breasts seasoned with taco seasoning and paprika, grilled to impart char and cook through. After slicing into bite-sized pieces, the chicken is placed inside warmed crispy taco shells. Fresh corn salsa and shredded romaine lettuce add sweetness and crunch, while Monterey jack cheese offers a mild, melty contrast.
Sour cream and guacamole are optional toppings that bring creaminess and coolness to balance the taco's smoky and spicy profile. The seasoning rub and grilling technique deliver a smoky depth that defines the chipotle style. Serving immediately ensures the shells remain crisp and the toppings fresh.
Additional suggested toppings include lime juice, sliced avocado, roasted red bell pepper, finely chopped onion, cabbage, queso fresco, and fresh cilantro to customize flavor and texture based on preference.
Ingredients
- 6 taco shells crispy
- 3/4 cup Monterey jack cheese
- 1 1/2 cups romaine lettuce sliced thin
- 1 1/2 cups corn salsa fresh
- sour cream optional topping
- guacamole optional topping
For the Chicken
- 3 chicken breast boneless
- 2 tablespoons taco seasoning
- 1 tablespoon paprika
- adobo sauce to taste (optional)
Instructions
- Filet the chicken so you have two thin halves of each breast. Mix together the taco seasoning and paprika and rub it all over the chicken.
- Grill over medium heat until you get nice grill marks and the chicken is fully cooked.
- Remove chicken from grill and chop it into one inch cubes.
- Warm your crispy taco shells, either in the microwave or oven (it makes them more crispy). Then layer each one with chopped chicken, salsa, lettuce, cheese, and other toppings if desired.
Notes
- Try fresh or store-bought corn salsa; homemade adds a bright sweetness that complements the smoky chicken well.
- Add a squeeze of lime for acidity that balances the richness of cheese and guacamole.
- Options like finely chopped red onion or cabbage provide crunch and sharpness without overpowering the chicken.
- A small amount of adobo sauce adds authentic smoky heat if desired.
- Warm taco shells before assembling to enhance crispness and texture.
