Copycat Chipotle Guacamole Recipe

  • 3 Hass avocados
  • 1/3 of a red onion chopped
  • 1 Jalapeño seeds and membranes removed, chopped
  • 1 lime juiced
  • 1 Large handful of cilantro chopped
  • 1/2 teaspoon salt

Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a medium mixing bowl.
  2. Use a potato masher or whisk to mash the avocados until your desired texture is reached.
  3. Stir in the diced onion, jalapeños, lime juice, cilantro, and salt. Taste and add more salt or lime juice as needed. Serve with chips, as a topping for tacos, burritos, and more!

Notes

  • To make it spicy: You can leave in the seeds from the jalapenos to add spice to the guacamole. If you would like it even spicier, you can add in more jalapeños to taste. 
  • Large vs small avocados: I like to use large avocados. If you can only find small ones, you can use four avocados.
  • Serve right away. This Chipotle Guacamole Recipe tastes best when eaten right away. If you're not planning to eat it immediately, see my tips below for storing it to prevent browning.
  • Optional additions: This is a copycat version of Chipotle's guacamole, and they pride themselves on using just six ingredients: avocados, onion, jalapeños, lime, cilantro, and salt. If you want to add diced tomatoes or garlic, feel free to, but it will be different from Chipotle's version.
  • Is guacamole keto? Yes! The main ingredient in guacamole is avocados, which are high in fat and low in net carbs, making it a great food to eat on a Keto diet. Guacamole is also naturally gluten free.
