Copycat Neiman Marcus Cookies

Ingredients

  • 2 cups all purpose flour 372 g
  • 2 1/2 cups whole oats blended fine, 260 g
  • 1/2 teaspoon fine ground salt 4 g
  • 1 teaspoon baking powder 5 g
  • 1 teaspoon baking soda 6 g
  • 1 cup unsalted butter sotfened
  • 1 cup granulated sugar 194 g
  • 1 cup brown sugar packed, 185 g
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 12 oz semi sweet chocolate chips
  • 4 oz dark chocolate bar chopped
  • 1 cup walnuts chopped, 3.5 oz

Instructions

  1. Preheat Oven: Preheat oven to 375℉ and line baking trays with silicone mats or parchment paper.
  2. Mix Dry Ingredients: In a medium-sized bowl, add flour, baking soda, baking powder, salt, and blended oats and mix. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, add the softened butter and sugars and use a hand mixer to cream on high for 3 minutes. Add the eggs and vanilla and mix until well combined.
  4. Create Dough: Add the dry ingredients to the creamed ingredients, adding about a cup at a time while mixing on medium.
  5. Add Chocolate: Once all of the flour is incorporated, add chocolate chips, chopped chocolate, and chopped walnuts to the dough and fold them in.
  6. Bake: Roll out 1 1/2 inch dough balls and line them on the baking trays 2 inches apart. Bake for 10-12 minutes, or until the edges of the cookies begin to brown. Let cool on wire racks.

  • Flour: You can use a 1:1 gluten-free flour for all purpose flour.
  • Oats: You can use oat flour in place of the whole oats, but we prefer the texture of blending the oats and you can blend them as much or as little as you'd like! 
  • Chocolate: The original recipe calls specifically for Hershey's Chocolate Bars, but we prefer a higher quality dark chocolate bar, but you can use whatever you prefer!
