Description
This pie starts with a baked deep-dish pie crust filled generously with fresh strawberries. A glaze is prepared by cooking water, sugar, and cornstarch into a thick mixture, then stirring in strawberry gelatin mix for flavor and color. Pouring this glaze over the strawberries creates a glossy, firm layer that encases the fruit and enhances its sweetness.
The pie is chilled to fully set the glaze, making it sliceable and keeping the berries intact. Optionally, it can be topped with Cool Whip to add a light and creamy contrast to the fruity filling. The result is a visually appealing strawberry pie with a balanced combination of textures and flavors.
Ingredients
- 1 cup water
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 6 tablespoons strawberry gelatin mix dry
- 1 pound strawberry stems removed, fresh
- 1 inch pie crust baked, deep-dish
- 8 ounces Cool Whip
Instructions
- Combine the water, sugar, and cornstarch in a medium-sized pot over medium heat. Cook, stirring occasionally, until the glaze is thick enough to coat the back of a spoon.
- Add the strawberry Jello mix to the glaze and stir to combine.
- Place the fresh strawberries into the baked pie crust and pour the strawberry glaze over the top. Chill for at least 2 hours.
- Top the pie with Cool Whip if desired.
Notes
- Pile strawberries high in the pie for a tall, attractive presentation similar to the original Shoney's pie.
