Ingredients

Brownies

  • 8 tbsp unsalted butter melted
  • 6 tbsp canola oil or avocado oil
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 4 large eggs room temperature
  • 1/2 tbsp vanilla extract
  • 1/2 tsp salt
  • 1 cup all purpose flour

Ganache

  • 1/2 cup heavy whipping cream
  • 8 oz semisweet chocolate

Topping

  • 4 tbsp Rainbow Candy Chips

Instructions

  1. Preheat the oven to 350°F. Line a 9x13 inch baking dish with parchment paper that overhangs slightly on the sides. This will make it easier to lift the brownies out of the pan for slicing and serving.
  2. In a large bowl, mix together the melted butter, oil, and sugar with an electric hand mixer on medium speed until well combined.
  3. Add the cocoa powder and beat until incorporated. Add the eggs, vanilla, and salt. Mix until smooth.
  4. Add the sifted flour and mix until just combined. Pour the batter into the prepared baking dish and smooth it into an even layer.
  5. Bake the brownies for 27-32 minutes, or until a toothpick inserted comes out clean with a few moist crumbs. Remove the pan from the oven and allow the brownies to cool completely.
  6. Meanwhile, place the heavy cream in a small pot over medium heat. Bring it to a simmer, then turn off the heat and add the chocolate chips. Allow the chocolate to melt for about 30 seconds, then whisk into a smooth consistency.
  7. Spoon the chocolate ganache frosting over the cooled brownies and smooth it into an even layer. 
  8. Sprinkle the candy chips over the ganache. Place the brownies in the fridge for 1-2 hours to allow the ganache to fully set, then slice and serve. Enjoy!
