Ingredients
Brownies
- 8 tbsp unsalted butter melted
- 6 tbsp canola oil or avocado oil
- 2 cups granulated sugar
- 1 cup unsweetened cocoa powder
- 4 large eggs room temperature
- 1/2 tbsp vanilla extract
- 1/2 tsp salt
- 1 cup all purpose flour
Ganache
- 1/2 cup heavy whipping cream
- 8 oz semisweet chocolate
Topping
- 4 tbsp Rainbow Candy Chips

Instructions
- Preheat the oven to 350°F. Line a 9x13 inch baking dish with parchment paper that overhangs slightly on the sides. This will make it easier to lift the brownies out of the pan for slicing and serving.
- In a large bowl, mix together the melted butter, oil, and sugar with an electric hand mixer on medium speed until well combined.
- Add the cocoa powder and beat until incorporated. Add the eggs, vanilla, and salt. Mix until smooth.
- Add the sifted flour and mix until just combined. Pour the batter into the prepared baking dish and smooth it into an even layer.
- Bake the brownies for 27-32 minutes, or until a toothpick inserted comes out clean with a few moist crumbs. Remove the pan from the oven and allow the brownies to cool completely.
- Meanwhile, place the heavy cream in a small pot over medium heat. Bring it to a simmer, then turn off the heat and add the chocolate chips. Allow the chocolate to melt for about 30 seconds, then whisk into a smooth consistency.
- Spoon the chocolate ganache frosting over the cooled brownies and smooth it into an even layer.
- Sprinkle the candy chips over the ganache. Place the brownies in the fridge for 1-2 hours to allow the ganache to fully set, then slice and serve. Enjoy!
