This Cosmic Brownie Cookies recipe takes everyone's favorite Little Debbie’s treat and turns them into fudgy rounds of deliciousness. Rather than spending a boatload on a Crumbl cosmic brownie cookie, make this delectably easy copycat recipe instead!

Ingredients
- 1 cup salted butter
- 1 cup brown sugar
- ½ cup white granulated sugar
- 2 large eggs
- 2 teaspoon vanilla extract
- ½ cup cocoa powder
- 1 teaspoon baking powder
- 2 ½ cups all-purpose flour
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- ½ cup mini-M&M’s

Instructions
- In a large mixing bowl, whisk together the butter and sugars with an electric hand mixer on medium-high speed until homogenous.
- Add the eggs and vanilla to the creamed butter mixture. Mix again until the eggs are fully incorporated with the creamed butter.
- Slowly add the cocoa powder, baking powder, and flour on a low-medium speed until the dry ingredients are fully incorporated into the wet ingredients. Scrape along the bottom of your mixing bowl with a spatula to ensure no pockets of flour or cocoa powder remain.
- Preheat your oven to 350 degrees Fahrenheit and bake the cookies 6 at a time for 11 minutes. The cookies should be about 2 inches in diameter.
- Melt the chocolate and heavy cream in the microwave on 30 second intervals, stirring after each interval.
- Allow the cookies to cool for 10 minutes before removing them from the baking sheet and placing on parchment covered rack to finish cooling.
- Once totally cool, dip the top of each cookie into the chocolate mixture and top with a few M&M’s.
- Repeat the process with the remaining cookie dough.
- Serve and enjoy!
Notes
- • You can switch out the semi-sweet chocolate chips for milk or dark chocolate depending on the flavor profile you want the chocolate to have. The exact type of chocolate will not affect the amount needed or the consistency of the product.
- • These cookies are best stored in an airtight container on the counter. They will be good for about 5 days when stored in an airtight container.
- • These cookies are rich and have a nice chew to them, kind of like a soft peanut butter cookie.
- • In addition to mini-M&M’s, you can use candy coated chocolate chips. These can be found at craft stores like Hobby Lobby but will be more expensive.
- • You can use either Dutch process or regular cocoa powder in this recipe. Dutch process will give the cookies a deeper, richer chocolate flavor. If you do that, I recommend using a semi-sweet or milk chocolate topping, so the chocolate flavor is not too bitter.
