Cottage Cheese with Chives and Roasted Garlic

  • 2 small heads garlic
  • 1 tablespoon olive oil
  • 1 pinch kosher salt
  • 2 cups cottage cheese 2% MF
  • teaspoon pepper or to taste
  • 2 tablespoons finely chopped chives plus more for garnish

Instructions

  1. Heat the oven to 400F.
  2. Remove the paper-thin skin of the garlic.
  3. Trim the top ¼ inch off the top of the garlic bulb. Place the heads of garlic onto a piece of tin foil and drizzle with olive oil and a pinch of salt.
  4. Tightly wrap the garlic in the foil. Air fry for 20 to 25 minutes or roast in the oven for 40 to 60 minutes. When cool to the touch, remove the garlic cloves from the skin by squeezing the cloves out or simply peeling the skin off.
  5. Add cottage cheese, roasted garlic cloves, and ground pepper to a food processor. Blend for 2 to 4 minutes or until smooth and creamy. The roasted garlic might not fully blend into the cottage cheese immediately, and you might need to blend it longer.
  6. Add the chives and blend until the chives are evenly mixed into the whipped cottage cheese with roasted garlic.
