  • 1 pizza base ready made
  • 3 tablespoon Greek yogurt heaped
  • 20 g cheddar cheese grated; for the base, light mature
  • 20 g cheddar cheese grated; for the topping, light mature
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 0.5 courgette small; sliced, yellow
  • 0.5 courgette small; sliced, green
  • 30 g goat cheese crumbled, soft
  • 1 lemon juice and zest only
  • 3 tablespoon chive finely chopped, fresh

Instructions

  1. Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
  2. Roll the 1 Ready made pizza base out.
  3. In a bowl, mix together 3 tablespoon Greek yogurt, 20 g Light mature cheddar, juice of 1 Lemon, and 1 pinch Sea salt and ground black pepper. Spread the mixture evenly across the pizza base.
  4. Add slices of 0.5 Yellow courgette and 0.5 Green courgette.
  5. Top with 20 g Light mature cheddar and 30 g Soft goats cheese.
  6. Sprinkle with 3 tablespoon Fresh chives and put in the oven for 10 minutes. If the base is still a little soft, put it back in the oven for 5 minutes.
  7. Sprinkle over some more chives and the zest of 1 Lemon before serving.

Notes

  • Use yellow and green courgettes together for varied color and flavor; green alone is an acceptable substitute.
  • If preferred, substitute the Greek yogurt topping with tomato sauce for a more traditional base.
  • Drain any liquid released from courgettes during baking and return the pizza to the oven to maintain a crisp crust.
  • For a vegan version, swap Greek yogurt with soya yogurt and use vegan cheese alternatives.
  • Optionally drizzle olive oil on the pizza before serving for extra richness or sprinkle red chili flakes for spice.
