Cranberry Banana Bread Recipe

Ingredients

  • 5 tablespoons butter softened, unsalted
  • 1 cup sugar
  • 1 cup banana mashed, very ripe
  • 1 teaspoon vanilla extract pure
  • ¼ cup milk
  • 2 egg large
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ cups cranberries coarsely chopped, fresh
  • ½ cup nuts chopped

Optional Vanilla Icing

  • 2 cups confectioners' sugar
  • 3 tablespoons heavy cream as needed to thin the icing
  • 1 teaspoon vanilla extract pure

Instructions

  1. Preheat the oven to 350°F and place the oven rack in the center. Grease an 8 1/2 by 4 1/2 inch loaf pan.
  2. In a medium mixing bowl, combine the butter and sugar.
  3. Add the banana, vanilla, milk, and eggs. Mix well until combined.
  4. Add the dry ingredients, mixing just until moist. Stir in the cranberries and nuts.
  5. Spread the batter evenly in the loaf pan and bake for about 1 hour and 10 minutes, or until a toothpick inserted in the center of the bread comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer it from the pan to a cooling rack.

Optional Vanilla Icing:

  1. Sift the confectioner’s sugar into a large bowl. Add the heavy cream, one tablespoon at a time, mixing after each addition until you have the desired consistency.
  2. Stir in the vanilla extract and drizzle the icing over the cooled bread.
