Description
The preparation involves combining cranberries, water, and sugar with peeled fresh ginger and a mix of whole spices: peppercorns, cloves, star anise, and cinnamon sticks. The mixture is heated to a simmer, gently crushed to release juices, then simmered quietly to infuse flavors without overpowering the fruit’s tartness. After cooling, the syrup is strained through a fine mesh to remove solids, yielding a smooth, ruby-colored syrup.
This syrup balances the bright acidity of cranberries with the sweetness of sugar and the warmth of fragrant spices, making it versatile for mixing into drinks or drizzling over desserts. The fresh ginger adds a subtle sharpness to complement the spices.
Store the syrup refrigerated in a clean jar, using within two weeks for best flavor. The syrup can be made in advance and kept chilled until needed.
Ingredients
- 2 cups Cranberry fresh or frozen
- 2 cups water
- 1 cup sugar can use honey
- 10 lices ginger peeled, fresh
- 1 teaspoon peppercorns
- 1 teaspoon clove whole
- 4 star anise
- 2 cinnamon stick
Instructions
- Add the cranberries, water, sugar, ginger, peppercorns, cloves, star anise, and cinnamon stick to a small pot over medium-high heat.
- As soon as the liquid starts to simmer, turn the heat to low. Crush the cranberries with the back of a spoon then simmer very gently for 5 minutes. Remove the pot from the heat and let it cool completely.
- Strain the cranberries through a fine-mesh sieve, pressing on the cranberries to remove as much liquid as possible.
- Transfer the syrup to a clean jar and store it in your fridge for up to 2 weeks.
