One Pot Rich & Creamy Ground Beef Stroganoff & Noodles

This One Pot Rich & Creamy Ground Beef Stroganoff features browned ground beef with onions and mushrooms simmered with garlic, beef broth, Worcestershire sauce, and egg noodles. Sour cream and cream cheese finish the dish, creating a creamy sauce coating the noodles and meat. The slow simmering makes the noodles absorb rich flavors for a hearty, comforting meal prepared in a single pan.

Description

The recipe starts by sautéing ground beef seasoned with salt and pepper alongside diced onions until the onions become translucent and tender. Adding mushrooms and cooking them until softened builds further depth of flavor. Garlic is stirred in shortly before removing excess grease, ensuring the base mixture is rich but not greasy.

Pouring in beef broth and Worcestershire sauce and adding egg noodles introduces the cooking liquid for the noodles, which simmer covered until tender and infused with meat flavors. The final addition of sour cream and softened cream cheese creates a thick, creamy sauce coating the noodles and beef mixture, with a balance of tanginess and richness.

This stroganoff serves as a filling main dish on its own, though pairing it with fresh parsley for garnish adds a bright touch. It can be adapted by substituting other ground meats or using beef strips with slight changes in cooking method.

Ensuring onions are fully cooked before adding liquids helps build flavor, and extra broth can be added if liquids evaporate too quickly during simmering. Fresh mushrooms are recommended, but drained canned mushrooms work as a substitute.

Ingredients

Servings
  • 1 pound ground beef lean
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper ground
  • 1 large white onion diced
  • 1 cup white mushroom sliced
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 4 cups egg noodles
  • 1/4 cup sour cream
  • 1/ 4 cup cream cheese softened, cream

Instructions

  1. Place the ground beef in a large skillet, with the salt and pepper, then add in the onion.  Cook and stir until the onion is soft and translucent and the beef has browned.
  2. Stir in the mushrooms, cook and stir until the mushrooms are tender, about 10 more minutes.
  3. Add in the garlic, fry for two more minutes, then drain any remaining grease from the skillet safely.
  4. Stir in the beef broth and Worcestershire sauce. Add in the egg noodles and stir to submerge completely in the mixture.
  5. Bring to a boil, stirring constantly, then reduce heat to medium low. Cover and simmer until the noodles are cooked, around 20 minutes. If needed, add more beef broth to cook the noodles completely if your liquid evaporates faster than the recipe. Let simmer until you have the amount of gravy you like - we like a lot!
  6. Once the noodles are cooked, stir in the sour cream, and cream cheese until combined into the mixture completely. Serve garnished with fresh parsley.

Notes

  • Cook onions thoroughly with the ground beef to develop flavor before adding other ingredients.
  • If broth evaporates before noodles are cooked, add additional beef broth in ½ cup increments to finish cooking.
  • Fresh mushrooms provide better texture and flavor, but canned mushrooms can be used if drained.
  • Ground pork or turkey can be substituted for ground beef, though the beef adds distinctive flavor.
  • Beef strips can replace ground beef if dredged in flour and cooked accordingly.
