Instructions

  1. Preheat the oven to 325 degrees F and lightly oil an 8" x 8" baking dish.
  2. Add the honey and almond butter to a skillet and heat over medium just until the two are melted together. Remove from heat and add the remaining ingredients except for the white chocolate chips. Stir well to combine and wait a minute or two before adding the white chocolate chips (to avoid having all of them melt).
  3. Pour the mixture into the prepared baking dish and use a rubber spatula and/or your hands to press the mixture firmly into the baking dish.
  4. Place on the center rack of the oven and bake for 22 to 26 minutes, until the edges are golden brown. Remove from the oven and allow the bars to cool to room temperature.
  5. Cover the dish with plastic wrap and refrigerate at least 4 hours (or freeze for 2 hours).
  6. Run a knife along the edges of the casserole dish and turn it out onto a cutting board. Cut desired-sized bars and enjoy!

Notes

  • *To make recipe vegan, use rice syrup instead of honey
  • **Replace the almond butter with peanut butter if you'd like.
  • You can switch up the add-ins to your hearts desire. Choose any chopped nut, dried fruit, or chocolate chip you like!
