Cream Cheese Pie with Chocolate Cookie Crust

This no-bake Cream Cheese Pie features a rich chocolate cookie crust and a smooth, creamy filling topped with fresh strawberries.

  • 3.5 ounces dark chocolate chopped
  • 30 Oreo Thins cookies
  • 1 teaspoon canola oil
  • cooking spray
  • 1 cup heavy whipping cream
  • 3 tablespoons sugar
  • 6 ounces cream cheese room temperature
  • ½ cup confectioner’s sugar
  • ¾ teaspoon vanilla extract
  • 1 pound strawberries washed, dried, and sliced in half
  • 2 tablespoons seedless strawberry jam

Instructions

  1. Place the chopped chocolate in a small microwave safe bowl. Microwave on high, stirring every 15 seconds, until chocolate is melted (about 45-60 seconds).
  2. Put the chocolate cookies in a food processor and process until finely ground.
  3. Add the melted chocolate and oil and pulse until thoroughly combined.
  4. Coat a 9-inch pie plate or tart pan with cooking spray.
  5. Gently press the cookie crust mixture evenly onto the bottom and up the sides of the pan. This is easier to do with buttered or oiled hands. Place the crust in the freezer for 15 minutes to harden and set.
  6. Meanwhile, whip the cream to soft peaks. Add the 3 tablespoons of sugar.
  7. In a separate bowl, beat the cream cheese, confectioner’s sugar, and vanilla.
  8. Fold the whipped cream into the cream cheese mixture.
  9. Carefully spread the mixture over the chilled crust.
  10. Arrange the berries in an attractive pattern on top of the whipped cream and cream cheese mixture. Cover with plastic wrap and refrigerate until ready to serve.
  11. When ready to serve, heat the strawberry jam for 10-15 seconds in a small microwave safe bowl. Brush the melted jam over the strawberries as a glaze.

Notes

  • Store covered in the fridge for up to 3 days.
  • For longer storage, freeze for up to 3 months. Thaw in the fridge before serving.
