Ingredients
Base
- 2 cups stuffing prepared according to package instructions
- 2 cups frozen broccoli florets
- 2 cups shredded cooked chicken or cubed cooked chicken, about 2 lbs
Sauce
- 1/4 cup salted butter
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup sour cream
- 1/4 cup lemon juice freshly squeezed
- 1 tablespoon garlic powder
- 1 tablespoon whole grain mustard
- 2 teaspoons dried parsley
- 2 teaspoons onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup mayonnaise
Topping
- 1 1/2 cups shredded cheddar cheese
- 2 cups crushed Ritz crackers
- 1/4 cup salted butter melted
- 2 teaspoons garlic powder
Instructions
Base
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch pan or a 3 1/2-quart casserole dish with nonstick cooking spray.
- Spread the prepared stuffing evenly across the bottom of the greased dish. Layer 2 cups frozen broccoli florets on top, followed by the cooked chicken.
Sauce
- In a medium saucepan, melt 1/4 cup salted butter over medium heat. Once melted, add 1/4 cup all-purpose flour and whisk continuously for 2-3 minutes, or until the mixture becomes smooth and turns a deep golden color.
- Gradually pour in 2 cups chicken broth, 1 cup heavy cream, and 1 cup sour cream, whisking constantly until smooth and simmering (about 3-5 minutes).
- Reduce heat to low and stir in 1/4 cup lemon juice, 1 tablespoon garlic powder, 1 tablespoon whole grain mustard, 2 teaspoons dried parsley, 2 teaspoons onion powder, 1 teaspoon salt, and 1 teaspoon black pepper. Continue stirring until fully combined.
- Add 1 1/2 cups shredded cheddar cheeseto the sauce, stirring until melted and smooth. Remove from heat. Stir in 1/2 cup mayonnaise until the sauce is well combined.
- Pour the sauce evenly over the chicken layer in the dish, making sure to cover all the ingredients.
Topping
- Sprinkle the remaining 1 1/2 cups shredded cheddar cheese evenly over the sauce layer.
- In a small bowl, combine 2 cups crushed Ritz crackers, 1/4 cup melted butter, and 2 teaspoons garlic powder. Stir until the cracker crumbs are fully coated with butter. Sprinkle the cracker mixture evenly over the top of the casserole.
Bake
- Bake, uncovered, in the preheated oven for 40-45 minutes, or until the top is golden brown and the sauce is bubbly around the edges.
- Remove from the oven and allow the casserole to cool for 5-10 minutes before serving. Enjoy hot!
