Creamy Chicken Gnocchi Soup (Olive Garden Copycat)

Creamy Chicken Gnocchi Soup is a hearty soup featuring a blend of sautéed onion, celery, garlic, and a creamy roux-based broth with chicken, fresh spinach, shredded carrot, and soft potato gnocchi. The soup is mildly seasoned with thyme and black pepper. This filling soup offers comforting textures from tender gnocchi and cooked chicken pieces, ideal for a warming meal that can be adjusted in thickness by varying the broth-to-cream ratio.

Description

The Creamy Chicken Gnocchi Soup blends sautéed aromatic vegetables with butter and olive oil, thickened gently with a flour roux to achieve a creamy base. Half-and-half and chicken broth create the soup's rich liquid into which fresh thyme infuses herbal notes. Tender chicken breast, shredded carrots, chopped spinach, and soft potato gnocchi combine for a mix of textures, with the gnocchi providing a pillowy bite. The soup simmers briefly until the gnocchi cooks through and the flavors meld. Salt and black pepper season to taste, creating a balanced and satisfying bowl reminiscent of popular restaurant variations.

This soup suits a cozy lunch or dinner, served hot and possibly with rustic bread for dipping. The portion includes cooked chicken making it a filling dish on its own.

Adjust broth volumes for a thinner or thicker soup by adding extra chicken broth. Using rotisserie chicken simplifies preparation while adding flavor. Serve immediately to enjoy the softness of the gnocchi and freshness of the spinach at their best.

Ingredients

Servings
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup onion diced
  • 1/2 cup celery diced
  • 2 garlic minced, cloves
  • 1/4 cup all-purpose flour
  • 2 cups half-and-half
  • 1 ounce can chicken broth for a thinner soup use 2 cans
  • 1 Tablespoon thyme fresh
  • 1 cup carrot shredded
  • 1 cup spinach chopped, fresh leaves
  • 1 cup chicken breast I used rotisserie, diced, cooked
  • 1 16 ounce potato gnocchi on the pasta isle, package
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large pot add butter and olive oil. Over medium high heat sauté onion, celery and garlic until tender. Add the flour to create a roux and cook for another minute.
  2. Slowly add the half and half and chicken broth and stir until it starts to thicken. Add the thyme, carrots, spinach, chicken and gnocchi. Simmer for about 5 minutes or until gnocchi is cooked and soup is thickened. (If you want a thinner soup add another can of chicken broth.) Salt and pepper to taste and serve immediately.

Notes

  • Using pre-cooked rotisserie chicken keeps the soup preparation quick and adds flavor.
  • For a thinner soup, increase the amount of chicken broth up to twice the amount suggested.
  • Add salt and pepper at the end to adjust the seasoning to your taste.
  • Serve immediately to maintain the tender texture of the gnocchi and freshness of the spinach.
