Creamy Healthy Broccoli Soup
Description
This broccoli soup recipe uses a large head of broccoli broken into florets and chopped stems along with diced potato, onion, and garlic simmered in vegetable stock until tender. The ingredients are blended with milk to produce a creamy texture while maintaining the fresh green color and vibrant flavor. The potato adds body, thickening the soup naturally.
The cooking process involves simmering the vegetables covered, then adding milk and blending until smooth. The soup can be further thickened by simmering longer on low heat. Seasoning with salt and freshly ground black pepper customizes the taste.
Serve this soup warm optionally topped with croutons made from toasted bread cubes sprinkled with salt. It works well as a light lunch, a starter for larger meals, or a comforting snack.

Ingredients
- 1 broccoli large head
- 1 potato , peeled and roughly chopped into cubes about 1.5cm / 1/2" cubes
- 1 white onion roughly diced, or brown onion
- 2 cloves garlic
- 2 cups / 500 ml vegetable stock or broth
- 1 cup / 250 ml milk (low fat, cow or soy)
- 1/2 cup / 125 ml water
- salt
- black pepper
Instructions
- Cut / break broccoli into florets into pieces about half the size of a golf ball. Roughly cut most of the stem, other than the main stem, into thumb size pieces. Discard the main stem, or keep for another use.
- Place all ingredients except milk, salt and pepper in pot, put on lid, bring to boil then turn down heat to medium and let it rapidly simmer for 8 to 10 minutes.
- Remove lid, add milk, bring back to boil, then remove from heat and whizz with hand held blender.
- You can thicken the soup by cooking it for longer on the stove on a medium low heat.
- Season to taste with salt and pepper, serve with croutons if desired.
Croutons
- Cut stale bread into cubes, lightly spray with olive oil, spread on baking stray and bake for 3 to 5 minutes. Sprinkle with salt then top on soup.
Notes
- Make croutons by cubing stale bread, misting with olive oil, baking briefly, then salting for a crunchy soup topping.
- For thicker soup, simmer longer on low heat after blending with milk.
- Adjust seasoning with salt and black pepper after blending for balanced flavor.
- Use white or brown onions interchangeably to suit taste.
