Description
The Creamy Italian Dressing blends red wine vinegar with finely grated Parmesan cheese, dried oregano, crushed red pepper flakes, garlic paste, and minced flat-leaf parsley. Mayonnaise and extra virgin olive oil are whisked in to form a creamy emulsion. The dressing can be prepared by whisking, blending, or shaking in a jar for convenience.
The dressing offers a balanced flavor profile with tanginess from vinegar and Parmesan, a touch of heat from red pepper flakes, and herbaceous notes from oregano and parsley. Its texture is smooth and creamy, coating salad greens thoroughly without heaviness.

Ingredients
- 1/3 cup red wine vinegar
- 1/2 cup Parmesan Cheese finely grated
- 2 teaspoons oregano dried
- 1/4 teaspoon crushed red pepper flakes hot
- 1 clove garlic paste
- 1/4 cup flat-leaf parsley Italian, minced
- 1/2 cup mayonnaise
- 1/2 cup extra virgin olive oil
- salt to taste
- black pepper to taste
Instructions
- In a large bowl, whisk the ingedients until a smooth creamy dressing has formed. Alternatively, use a food processor.
- Taste the dressing and season with salt and pepper to taste. If the dressing is too thick, simply thin with water, an ounce at a time. Enjoy!
Notes
- This recipe produces nearly 2 cups, about 16 servings of 2 tablespoons each.
- Make by hand whisking, in a blender, or shaking vigorously in a sealed jar.
