Ingredients
- 3 tablespoon avocado oil or olive oil
- 1 lb portobello mushrooms finely chopped
- 8 oz ricotta cheese
- ¼ c mayo I like using avocado oil mayo
- ½ c Parmesan Cheese grated
- 2-3 cloves garlic pushed through a garlic press
- 1 tablespoon capers
- 2 teaspoon apple cider vinegar
- 2 tablespoon green chives
- ¼ teaspoon salt
- ¼ teaspoon pepper

Instructions
- Heat avocado oil in a large pan and over a medium heat. Add mushrooms and cook, stirring frequently, until all liquid evaporates and mushrooms start to brown. Season with ¼ teaspoon salt and ¼ teaspoon of pepper.
- Transfer the mushrooms to a bowl and let them cool to room temperature for about 10 minutes.
- In a large bowl, combine ricotta, mayo, Parmesan cheese, garlic, capers, vinegar, and sauteed mushrooms. Adjust salt and pepper.
- Transfer the mushroom dip to a serving bowl and serve with toasted slices of baguette, crackers, or chips.
Notes
- Ricotta cheese. If you don't have ricotta cheese on hand, you can use cream cheese or Greek yogurt as a substitute. Both options will give your mushroom dip a rich, creamy texture. If you want a lower-calorie option, Greek yogurt would be the best choice.
- Mushrooms. If you're a fan of bold flavors, try replacing the portobello mushrooms with wild mushrooms or shiitake. When cooking the mushrooms, be patient. Let all the liquid evaporate and allow the mushrooms to become tender and start to brown.
- Add-ons. You can customize this recipe to suit your taste. Some delicious additions could be sautéed onions, fresh herbs like parsley, grated parmigiano reggiano, or even some crumbled sausage for a non-vegetarian version. Just remember to adjust the salt and pepper accordingly.
- To Refrigerate: Transfer the dip into an airtight container. This dip can be stored in the fridge for up to three days.
- To Freeze: Unfortunately, due to the cream cheese and sour cream ingredients, freezing this mushroom dip is not recommended. Both of these ingredients can separate and become grainy when frozen and then thawed, altering the texture of your dip. While it is still safe to eat, the change in texture might not be as appetizing.
