  • 1/2 cup dairy-free dark chocolate chips
  • 1 tablespoon unsweetened vanilla almond milk
  • 3/4 cup no-stir almond butter divided
  • 4 1/2 tablespoons honey divided
  • 1 1/2 cups gluten-free crispy rice cereal
  • 1 can (13 1/2 ounces) coconut cream

Instructions

  1. Line an 8x8-inch baking pan with parchment paper, leaving some excess over the sides to use as handles for easy removal later.
  2. In a large, microwave-safe bowl, combine the chocolate chips and almond milk. Microwave on 50% power in 30-second intervals, stirring between each, until smooth and fully melted.
  3. Stir 2 tablespoons of almond butter and 1 1/2 tablespoons of honey into the melted chocolate until well combined. The mixture will thicken slightly, which is normal. Add the crispy rice cereal and stir until evenly coated.
  4. Press the cereal mixture firmly into the bottom of the prepared pan. It’s fine if the cereal cracks slightly as you press. It won’t affect the final result.
  5. In a large bowl, use an electric hand mixer to beat the chilled coconut cream (the solid portion only), 4 tablespoons of almond butter, and the remaining 3 tablespoons of honey together until smooth and well combined. Spread this mixture evenly over the crust.
  6. Melt the remaining 6 tablespoons of almond butter in the microwave until smooth. Drizzle it over the coconut cream layer in even lines. Use a sharp knife to drag through the lines and create a decorative swirl pattern.
  7. Cover the pan with aluminum foil and freeze for 2 to 3 hours or overnight, until firm.
  8. Use the parchment paper handles to lift the bars out of the pan. Let them sit at room temperature until slightly softened, as the freezing time will affect how quickly they thaw. Slice into squares and enjoy!
