Crispy roast potatoes is a classic and popular side dish in American or western cuisine. It goes well with meats like chicken chop, pork, beef and seafood. This crispy roasted potatoes recipe has both oven and air fryer methods.

Ingredients
- 2 pounds Medley potatoes
- ½ teaspoon salt
- ½ tablespoon garlic powder
- 1 tablespoon dried parsley
- 1 tablespoon fresh Rosemary
- 1 tablespoon vegetable oil

Instructions
Oven Method:
- Wash and cut 2 pounds of gourmet medley potatoes into cubes. Smaller one cut it into 4 pieces. Bigger one cut it into 6 to 8 pieces.
- Then, put the cut potatoes into a big mixing bowl.
- Add ½ tablespoon of garlic powder, ½ teaspoon of salt, 1 tablespoon of fresh rosemary, 1 tablespoon of dried parsley and 1 tablespoon of vegetable oil. Mix it well.
- Next, wrap a foil on the tray. Then, lay the seasoned potatoes on the tray.
- Preheat the oven to 400 F, bake at 400 F for 45 minutes.
Air Fryer Method:
- Wash and cut 2 pounds of gourmet medley potatoes into cubes. Smaller one cut it into 4 pieces. Bigger one cut it into 6 to 8 pieces.
- Then, put the cut potatoes into a big mixing bowl.

- Next, wrap a foil on the tray. Then, lay the seasoned potatoes on the tray.
- Push the French fries button function or air fry function on the air fryer oven, cook them at 400 F for 15 minutes. It will be golden brown and crispy. You may need to separate 2 times and cook it.
Notes
- Use medley potatoes, they taste even better. However, if you don't, regular potatoes are ok as well, just wash and scrub the skin.
- Cut the potatoes into cubes, if potatoes are a little bit bigger, divide them into 6-8 pieces. Small ones, I usually cut them into 4 pieces.
- Add the seasoning then mix well with the potatoes.
- Lay the seasoned potatoes on the cookie sheet with a foil.
- Bake it at 400 F for 45 minutes.
- If you use an air fryer, cook it at 400F for 15 minutes.
