Crispy Sweet Cinnamon Keto Waffles
Description
The recipe combines finely ground almond flour with salt, baking soda, baking powder, and a blend of cinnamon, nutmeg, cloves, and a sweetener to form the dry base. Egg yolks mixed with vanilla extract and melted butter add moisture and richness. Separately, egg whites are beaten until fluffy peaks form, then carefully folded into the batter to retain airiness for a lighter waffle.
Cooking the batter in a preheated waffle iron yields waffles with slight crispness outside and a soft, tender crumb inside. The inclusion of warm spices and a low-carb sweetener provides subtle sweetness without added sugar. These waffles suit small servings, typically for two people, making them practical for keto-friendly breakfasts or brunches.
Serving suggestions include butter and low-sugar syrup, supporting the recipe’s keto orientation. The texture contrast between the crispy edges and soft interior is a highlight. Nutritional information is suggested to be divided by two for accurate per-serving values.

Instructions
- In a medium bowl, whisk together all of the dry ingredients in a bowl. Set aside.
- Divide the eggs and place the yolks in one bowl and the whites into a medium sized bowl ( large enough to use a hand mixer to beat them in). Mix together the egg yolks, vanilla and butter and set aside.
- Beat the egg whites until as light and fluffy as they can get ( the whites should form peaks when you life up the beaters).
- Mix the egg yolks mixture into the dry ingredients. ( it will be a dry mixture.) Then proceed to add in the eggs whites, slowly mixing them in until the mixture is fully combined. You will lose some lift, don't worry, just combine them in until the mixture is smooth.
